leek ¼ cup of vegetables cut into brunoise (Carrot, Bell Pepper, Leek and Onion)
sherry-vinegar ⅛ cup Sherry Vinegar
olive-oil ½ cup Olive Oil
water ⅛ cup Water
salt Salt
sugar 1 tablespoon Sugar

Preparation

  1. In a bowl place the mashed garlic, sherry vinegar, water, salt and sugar and mix with a whisk.

  2. Gradually start adding the olive oil to the mixture, in the form of continuous filament, whisking until the mixture is completely homogenized.

  3. Rectify seasoning.

  4. Add vegetable in brunoise and mix.
