They are the bud of the shrub with the same name or also called caper bush. It is ideal to accompany a wide range of recipes, very present in the Mediterranean, although they are native to Asia, some historians suggest that it was the Greeks who introduced them into the Mediterranean countries.

With a mildly bitter taste, subtle aroma and color make them irresistible for use especially with fish, on pizzas or pasta, in fact they are especially associated with the typical dishes of Italian and Greek cuisine.
